Is there a canon?

A literary canon is a list of works which represents the most important works in Literature. But, if there doesn't exist a stable definition for literature, how can there be a canon? In this picture, you can see some canonical authors but not all their works are canonical Why? Do you think they're canonical or not? Why? Are these authors canonical just because they're taught at University? Are only some of their works canonical for the same reason? If so, are Literature professors in charge of defining the canon? What about readers? Don't we have an opinion?
